Sear the Beef:

  • In a large, heavy-bottomed pot, heat Flora Fine Foods Extra Virgin Olive Oil over medium-high heat.
  • Pat the beef pieces dry and season them with Sea Salt and freshly ground black pepper. Sear the beef until browned on all sides, working in batches if necessary. Remove the beef from the pot and set it aside.

 Sauté the Aromatics:

  • In the same pot, add the chopped onion and minced garlic. Sauté until they become fragrant and the onions turn translucent.

Add Vegetables:

  • Stir in the diced carrots and celery, cooking for a few minutes until they start to soften.

Deglaze with Wine:

  • Pour in the Red Wine, using a wooden spoon to scrape up any browned bits from the bottom of the pot. Let it simmer for a few minutes, allowing the alcohol to evaporate.

Simmer with Tomatoes and Broth:

  • Return the seared beef to the pot.
  • Add Flora Fine Foods Crushed Tomatoes, Broth, bay leaves, Flora Fine Foods Rosemary, and Thyme sprigs.
  • Stir in Flora Fine Foods Tomato Paste to thicken the stew.

Simmer Gently:

  • Reduce the heat to low, cover the pot, and let the stew simmer gently for about 1.5 to 2 hours. The beef should become tender, and the flavors meld.

Add Peas and Green Beans:

  • About 20 minutes before serving, add the peas and green beans to the stew. They should cook until tender yet slightly crisp.

Thicken (Optional):

  • If you prefer a thicker consistency, create a slurry by mixing 2 tablespoons of all-purpose flour with a bit of water until smooth. Stir this into the stew and simmer for a few more minutes.

Adjust Seasoning:

  • Taste and adjust the seasoning with Sea Salt and freshly ground black pepper, as needed.

Serve:
