Fettucine alla Nursina (Fettucine with Anchovies and Truffles)

Fettucine alla nursina is a traditional Italian pasta dish from the Umbria region.  It combines fettucine noodles with anchovies, garlic, olive oil, salt, pepper, and the flavor of black truffles.

Instructions
 

  • Heat 8 quarts of water with salt, and once boiling, add fettucine.  
  • While pasta is boiling, heat olive oil in medium saucepan, then add garlic and saute just until soft 
  • Add anchovies, and continue to cook another minute or so 
  • Add truffles or truffle oil, turn pan to low until removed to mix with fettucine
  • Drain fettucine when cooked to al dente
  • Toss in a serving bowl with the pan contents until well mixed. 
  • Add more truffles if desired or a drop or two of additional truffle oil
  • Serve hot
