Who can forget the first time they were served a bountiful bowl of beloved bowties?  The farfalle pasta or “butterfly” pasta in Italian is one of the oldest and most renowned pastas in the world. Created in the 1500’s in the Lombardi and Emilia-Romagna regions of Northern Italy, which were made by cutting jagged, wide ribbons of pasta into small sections and pinching the middle together.  This pasta is incredible for cream sauces and tomato-based sauces.  If you’re looking for casserole pasta, farfalle pasta is perfect for putting together a quick fix. In Modena, farfalle pasta is known as strichetti and traditionally is served with prosciutto and arugula.
