Jota Triestina

Jota soup is a hearty, warming soup made with beans, potatoes, sauerkraut, and sometimes meat. It's a staple dish in Friuli-Venezia Giulia, especially during the colder months.

  • Add Unfiltered Organic Extra Virgin Olive Oil to a large saucepan over medium heat temperature. Add the onion and Flora garlic, and sauté until softened, about 5 minutes.
  • Add the can of Flora cannellini beans.  Include the liquid.
  • Add the sauerkraut, potatoes, smoked sausage or ham hock (if using), bay leaves, thyme, and enough water to cover the ingredients. Bring to a boil, then drop the temperature and simmer for about 35 minutes or until the potatoes are tender.
  • If needed, add water or vegetable stock to create a soup-like consistency, and season with pepper and salt to taste. 
  • Simmer on low for 10-15 minutes or until all the flavors have melded together.
  • Serve hot with a crusty bread on the side. Enjoy!
