
Everybody recognizes gnocchi as that wonderful, fluffy potato pasta that is usually served hot with a variety of cream sauces, marinara or vodka sauces. Â But what about a cold dish? Serve gnocchi cold? Â That sounds crazy, but we’ve put together a wonderful cold pasta dish that takes on the ingredients of a delicious caprese salad.
Ingredients:
- 1 lb Flora Gluten-Free Gnocchi Potato Pasta
- 2 cups diced cherry tomatoes
- 2 cups marinated mozzarella, diced
- 1 large handful of basil, finely diced
- 1 tsp salt
- Âľ tsp pepper
- 1 tablespoon of Flora Organic Extra Virgin Olive Oil
- 1 drizzle of Flora Basil Caprese Glaze
