Organic Cannellini beans Soup


  • 2 garlic cloves, chopped

  • 1 pound escarole, chopped 

  • 1 (15-ounce) can organic cannellini beans, drained and rinsed

  • 1 (1-ounce) piece Parmesan Freshly ground black pepper

  • 4 cups chicken broth (preferably low salt)

  • 8 teaspoons extra-virgin olive oil


  1. Heat 2 tablespoons of olive oil in a heavy large pot over medium heat.

  2. Add the garlic and sauté until fragrant, about 10 seconds.

  3. Sauté escarole and until wilted (2-3 minutes)

  4. Add a pinch of salt.

  5. Add chicken broth, beans, and Parmesan cheese.

  6. Cover and simmer until the beans are heated through (5-6 minutes)

  7. Season with salt and pepper, to taste.
