Fresh from the fields of Puglia, this Unfiltered Olive Oil is the initial juice of the olives immediately after crushing, separation and decanting– before filtration.  The oil is stored in tanks to settle, which allows sediments to be separated from the oil.  No heat or chemical additives were used to extract the oil from the olives, nor any added heat to the process.  Flora Organic Unfiltered Olive Oil comes from the Coratina olive, a variety that has its own cultivation center in Puglia, Italy.  Yellow green in color, Coratina oil is very aromatic with a fruity and deep flavor accompanied by a bitter, spicy aftertaste.  The oil is rich in polyphenols, is an excellent antioxidant and eliminator of “free radical” molecules and can contribute to lowering ‘bad’ cholesterol and reducing the risk of heart disease.  This oil  enriches any salad, vegetable medley or soup.
